Chicken Cutlets with Sunny Side Up!

One of the Insta reels that caught my attention was a chicken nugget recipe. I liked how they made extremely simple chicken nuggets.  Of course, my version is slightly different, as I omitted onions from the recipe.  

My version of simple chicken cutlets consists of a bowl of minced chicken to which I added a couple of grated boiled potatoes, bread crumbs, ginger-garlic paste, corn flour, and salt to taste. 

I mixed it well until it had a dough-like consistency. I took some portions, made round cutlets, and shallow-fried them in cold-pressed sesame oil in a pan.  

The taste and texture are exactly like chicken nuggets, only better. I had them with a sunny side up, sprinkled with a bit of salt, red chilli powder (only a hint), and a finely chopped green chilli. I was introduced to this green chili sprinkled sunny side up at my childhood friend’s place, and I’ve been hooked on it ever since. 

Get ready to devour the chicken cutlets with your choice of sauces. I had mine with hung curd (infused with olive oil and garlic), wrapped in lettuce leaves, and the naughty sunny side up!  This was a perfect ‘pick me up’ breakfast for those mundane midweek blues.
